Ingredients
- 6 raw chicken breasts (can be frozen)
- 64 oz V8 or tomato juice
- 4 cups vegetable broth or bone broth (we use this for a protein boost)
- 1 can white beans
- 1 can sweet corn
- 2 cups frozen sweet peas
- 2 cups chopped carrots
- 1 cup uncooked wild rice
- 2 cups frozen spinach
- 1 chopped onion
- 2T italian seasoning
- 1T salt
- 1t pepper
- 1T garlic powder
- any additional vegetables or goodies from your fridge/pantry that you want to use up! This is the perfect “clear out the fridge” recipe. These ingredients are what I typically use for this soup, but get creative.
Directions
- Add V8, broth, seasonings, and chicken to a large stock pot or crockpot
- If using a stock pot, bring to a boil and reduce to medium. Simmer until the chicken is cooked, about 15 minutes.
- If using a crockpot, also add wild rice and carrots – let cook on high for 3-4 hours or low 5-6 hours.
- Once cooked, add the rest of the veggies and let simmer as long as you’d like, 30 minutes minimum.
- Option: we like our soup with a thicker broth – when cooking on the stovetop, bring back to a boil, add in a cornstarch slurry, and mix slowly for 4-5 minutes. Re-test for taste.
