- 1/2 cup cottage cheese | I prefer to whip this with a submersion blender but you can use it either way
- 12 turkey sausage links
- 1 1/2 cup mozzarella cheese
- 1/2 cup greek yogurt
- 1/4 cup hot sauce, like cholula
- 10 flour tortillas
- 1 tablespoon salt
- 1 teaspoon pepper
- optional: I use another tablespoon of a garlic and herb seasoning from Kinder
Directions
- In a medium bowl, mix eggs, egg whites, cottage cheese, salt, pepper, and any additional spices you would like.
- Cook your scrambled eggs in a saucepan over medium heat.
- While the eggs are cooking, cut turkey sausage links into 1/2 inch slices
- Once cooked, add turkey sausage and cheese
- In a small bowl mix greek yogurt and hot sauce
- Start assembling | for each burrito add a 1/2 cup of egg mixture and 2 tablespoons of the greek yogurt mixture
- Roll up your burritos and wrap in foil to store in the freezer, or move into a ziplock bag to store in the fridge
- When you re-heat these, be sure to use the air fryer. If they are in the fridge, microwave for 30 seconds on each side then air fry for 2 minutes on each side to get that optimal crispiness. If you are pulling them directly from the freezer (recommended to thaw in the fridge) microwave for 1 min 15 seconds on each side then air fry for 2 minutes on each side.
