Have you ever seen people making tortillas and you just assume is complicated? A process? Too much work?

Well, as a lazy cook (at times), I’m here to tell you there’s a suuuuuper easy way to have them. You can do this with sweet potatoes or regular potatoes. I happened to have one lonely little sweet potato sitting in my cupboard and wanted to give it a shot and let me tell you.. I was not disappointed at all!

This is seriously two ingredients.

1 large potato.

5oz plain greek yogurt.

That really is it. If you need a little more moisture, add water 1 teaspoon at a time.

Potato hack: now if you are just eating a potato, the microwave trick is NOT recommended. If you don’t have any potatoes that are already baked and you want to make these quickly – you can peel a potato, cut it up into cubes, drizzle with a touch of olive oil, and pop in the microwave until fork tender. I am sure there are people out there who are yelling BLASPHEME but the rest of us real-lifers are always looking for some great short cuts and this is one of them!

You can either mash the potato up with your fork, or better yet, add it into a food processor. The food processor will ensure a very smooth tortilla. That is the way I prefer but of course, if you don’t have one, mashing it with a fork and adding flour will work just fine.

Ingredients

  • 1 large sweet potato (or regular, yellow preferred), cooked
  • 5 ounces plain greek yogurt
  • Optional: Italian seasoning, chili powder, or really anything you want to spice them up!

Directions

  1. Put 1 large peeled potato into your food processor
  2. Once it is smooth, add yogurt
  3. If mixture is a bit dry, add water, 1 teaspoon at a time
  4. Shape into a ball and flatten into tortillas
  5. Using either a pan or a griddle (my preference) over med-high heat, cook for 1-2 minutes per side
