Banana Protein Oat Mug Muffin

Are you constantly on the search for super simple breakfast recipes? Ones that are quick to make but taste like a weekend treat? This banana oat mug muffin is not only gluten free and dairy free, it takes just a couple minutes to put together, goes in the microwave for 3.5 minutes, and is ready to go! This is perfect for a build-your-own mug muffin bar for the family, too! Everyone gets their own mug, kids get to pick their own toppings, and off to school they go. After this quarantine is over, of course.

There are so many mug recipes out there and I was on the search for a breakfast recipe that was high in fiber, moderate in calories, and includes WHOLE foods. No flour, no butter, just healthy goodness. I’m always watching my calories and although I totally believe in indulging on occasion, this recipe is perfect for the typical week day morning. I’ve been going crazy with these before a mid-morning run. This will give you tons of great energy!
Add a few simple ingredients into a bowl, mix until it’s combined, spray a mug with cooking spray, pour batter into the mug, cook for 3.5 minutes, and that’s it! SO simple.
